			<content:encoded><![CDATA[<p>12 medium sweet potatoes<br />
1 1/2 sticks butter or margarine<br />
3/4 cup brown sugar<br />
3/4 cup flour<br />
1/4 tsp. ground cinnamon<br />
1/4 tsp. salt<br />
1 cup toasted pecan pieces<br />
1 cup miniature marshmallows</p>
<p>Preheat oven to 400 degrees F.  Spray a sheet pan with no-stick cooking spray.</p>
<p>Scrub sweet potatoes thoroughly.  Prick each them with a fork in a couple of places, and place on the sheet pan.  Bake at 400 degrees F. for about 45 minutes, or until a knife inserted in the center of the potato goes in easy.</p>
<p>In a large bowl, mix butter, brown sugar, and flour together.  Add the cinnamon, salt, pecans and marshmallows and stir to combine.</p>
<p>Cut a slit in the sweet potatoes lengthwise down the center, not going all the way through.  Push the ends toward the middle, which will cause the potato to open up.  Fill each potato with the marshmallow mixture and put back in the oven.  Back for another 20 minutes or until the topping is bubbly and brown.</p>

1-3/4 cups sliced fresh mushrooms<br />
3 green onions, sliced<br />
2 tablespoons chopped pecans<br />
1-1/2 teaspoons olive oil<br />
4 boneless skinless chicken breast halves<br />
1/2 teaspoon rotisserie chicken seasoning<br />
2 slices provolone cheese, halved</p>
<p>In a large skillet, saute the spinach, mushrooms, onions and pecans in oil until mushrooms are tender. Set aside and keep warm.  </p>
<p>Sprinkle chicken with seasoning.  Grill chicken, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until a meat thermometer reads 170°. </p>
<p>Top with cheese. Cover and grill 2-3 minutes longer or until cheese is melted. To serve, top each chicken breast with reserved spinach mixture. </p>

1 package (8 oz) cream cheese, softened<br />
1/3 cup sugar<br />
1/4 teaspoon salt<br />
1 teaspoon vanilla<br />
1 egg<br />
3 eggs<br />
1/4 cup sugar<br />
1 cup corn syrup<br />
1 teaspoon vanilla<br />
1 1/4 cups chopped pecans </p>
<p>Place pie crust in 9-inch glass pie pan.  Heat oven to 375°F. </p>
<p>In small bowl with electric mixer, beat cream cheese, 1/3 cup sugar, the salt, 1 teaspoon vanilla and 1 of the eggs on low speed until smooth and well blended; set aside. </p>
<p>In another small bowl with electric mixer, beat remaining 3 eggs, 1/4 cup sugar, the corn syrup and 1 teaspoon vanilla on medium speed until well blended. </p>
<p>Spread cream cheese mixture in bottom of crust-lined pan. Sprinkle with pecans. Gently pour corn syrup mixture over pecans. </p>
<p>Bake 35 to 45 minutes or until center is set. After 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Cool completely, about 2 hours. Store in refrigerator. </p>

1/2 cup packed brown sugar<br />
1/3 cup all-purpose flour<br />
3 tablespoons butter, softened<br />
1/2 cup chopped pecans</p>
<p>Preheat oven to 325 degrees F (165 degrees C).</p>
<p>(If using canned sweet potatoes, omit this step) Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.</p>
<p>In a large bowl, mix together the sweet potatoes, sugar, eggs, salt, butter, milk and vanilla. Mix until smooth. Transfer to a 9&#215;13 inch baking dish.</p>
<p>In medium bowl, mix the sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.</p>
<p>Bake in the preheated oven 30 minutes, or until the topping is lightly brown.</p>

1/2 cup coconut<br />
1/2 cup chopped pecans<br />
1 (8 ounces) carton Cool Whip</p>
<p>In a large mixing bowl, combine cottage cheese and dry orange gelatin and mix well. Stir in Mandarin oranges, pineapple, coconut, and pecans. Fold in Cool Whip. Refrigerate. </p>
<p>Serve in a pretty clear bowl to show it off. </p>
<p>Yield: 8 to 10 servings </p>

			<content:encoded><![CDATA[<p>24 frozen bread rolls (this dough is found in your grocer&#8217;s frozen food section &#8211; I use the Parker House roll type)<br />
1 sm. pkg. butterscotch pudding (not instant)<br />
1 stick butter<br />
3/4 c. brown sugar<br />
1 tsp. cinnamon<br />
1/2 cup chopped pecans</p>
<p>The night before: Spray Bundt pan or tube pan with non-stick cooking spray.  Arrange frozen rolls in pan. Sprinkle dry pudding mix evenly over rolls.</p>
<p>In small saucepan, melt butter, add brown sugar and cinnamon. Cook until bubbly. Stir in pecans and pour evenly over rolls.  Cover tightly with foil and leave on counter overnight.</p>
<p>In the morning: Uncover and bake in 350 degree oven for 30 minutes. Let stand 5 minutes. Carefully turn out on serving plate, pull apart, eat and enjoy.</p>
<p>Please note: If you have unbroken pecans, lay some (upside down) in the pan before adding the rolls.  This will make your bread ring look very nice when inverted.</p>

<p>Pierce potatoes with a fork; arrange on paper towels in microwave oven.</p>
<p>Microwave potatoes at HIGH for 10 minutes, rearranging the potatoes after 5 minutes.</p>
<p>Wrap potatoes in a towel; let stand for 5 minutes.</p>
<p>Scoop out pulp; discard skins. Combine pulp, milk, 1 tablespoon brown sugar, and salt in a medium bowl; mash.</p>
<p>Combine 1 tablespoon brown sugar, softened butter, pecans, and cinnamon in a small bowl. Top each serving with pecan mixture.</p>
<p>Yield: 2 servings (serving size: 3/4 cup potatoes)</p>

1 tablespoon grated orange zest<br />
1 1/2 cups fresh (or frozen) cranberries<br />
1/2 cup pecans, coarsely chopped<br />
1/4 cup margarine, softened<br />
1 cup white sugar<br />
1 egg<br />
3/4 cup orange juice</p>
<p>Preheat oven to 350 degrees F. Grease a 9&#215;5 loaf pan. </p>
<p>In medium mixing bowl, combine flour, baking powder, baking soda and salt. Stir in orange zest, cranberries, and pecans. Set aside.</p>
<p>In large mixing bowl, cream together margarine, sugar, and egg until smooth. Stir in orange juice. Beat in flour mixture until just moistened. Pour into prepared pan.</p>
<p>Bake for 1 hour in the preheated oven, or until the bread springs back when lightly touched. Let stand 10 minutes, then turn out onto a wire rack to cool. Wrap in plastic when completely cool.</p>

<p>Layer apples in a lightly greased microwave-safe pie dish or plate. Sprinkle with sugar and cinnamon. Cover with microwave-safe lid or plastic wrap. Microwave at High power for 2 minutes. Remove from oven. For topping, combine cooled melted butter, brown sugar, chopped nuts and flour in a bowl. Add beaten eggs, stir to blend well. Pour mixture over apples evenly. Microwave, uncovered, at High power for about 7 minutes. Turn the dish at least once during cooking if your oven is not a rotating one. Shield outer edges of pie with foil to insure even cooking.* Center of pie should be exposed. Microwave at High power for 3 to 4 minutes longer or until apples are soft and center of pie is cooked.</p>
<p>REMEMBER: Topping does not get crunchy when cooking in the microwave oven.</p>
