3 small yellow summer squash, thinly sliced<br />
1 red bell pepper, cut into 1/2-inch pieces<br />
1 yellow onion, thinly sliced<br />
2 Tbs. peanut oil<br />
3 cups cooked chicken, cubed or shredded<br />
12 small corn tortillas, cut into pieces<br />
10 3/4-oz. can cream of celery soup, undiluted<br />
8-oz. container sour cream<br />
8-oz. jar picante sauce<br />
4.5-oz. can chopped green chiles (do not drain)<br />
one packet of fajita seasoning<br />
2 cups shredded Cheddar cheese</p>
<p>Preheat oven to 350 degrees.  Drain chopped spinach and pat dry with paper towels. Heat oil in a large skillet over medium-high heat. Sauté squash, bell pepper, and onion for 6 minutes or until tender, then remove from heat. Stir in spinach, chicken, next 6 ingredients, and 1 1/2 cups cheese. Transfer to a lightly greased 9&#215;13 baking dish.  Bake for 30 minutes. Sprinkle with remaining cheese, then bake for 5 more minutes.</p>

1 can cream of celery soup<br />
2 cups chicken broth<br />
1/2 cup butter, melted<br />
1 8-oz. package stuffing mix<br />
1 cup shredded Swiss cheese</p>
<p>Preheat oven to 350 degrees.  Prepare a 2 quart casserole dish with non-stick cooking spray.</p>
<p>Mix together soup and chicken broth, then add chicken.  Combine butter with stuffing mix, then add that to the chicken mixture.  Pour into a 2 quart casserole dish and bake for 30 minutes.  Top with cheese 5 minutes before it finishes baking.</p>

2 cup sour cream<br />
1 can cream of celery soup<br />
2 cans cream of chicken soup<br />
1/4 cup poppyseeds</p>
<p>Topping:<br />
2-3 sleeves Ritz crackers, crushed<br />
2 pkg. sliced almonds<br />
1 1/2 stick butter</p>
<p>Prepare 9&#215;13-inch casserole dish by spraying with non-stick cooking spray.  </p>
<p>Boil chicken breasts until done (no pink inside).  Tear cooked chicken into bite-sized pieces. Put into large mixing bowl. Add other ingredients and mix thoroughly. Pour into prepared 9&#215;13-inch casserole dish.</p>
<p>Melt butter, add crackers and almonds. mix thoroughly. Spread on top of casserole.</p>
<p>Bake at 350 degrees for 30 minutes or until bubbly.</p>

6 bone-in pork chops, 1/2-inch thick (about 3 pounds)<br />
1 medium onion, sliced (about 1/2 cup)<br />
1 can (10 3/4 ounces) Cream of Celery Soup<br />
1/2 cup water </p>
<p>Heat the oil in a 10-inch skillet over medium-high heat.  Add the pork and cook until well browned on both sides.</p>
<p>Add the onion and cook until the onion is tender, stirring occasionally.  Stir in the soup and water and heat to a boil.  Reduce the heat to low.  Cook for 5 minutes or until the pork is cooked through.</p>

1/2 cup chopped onions<br />
16 oz. sour cream<br />
2 c. grated Cheddar cheese<br />
1 can cream of celery soup</p>
<p>TOPPING:<br />
2 c. crushed cornflakes mixed with 1/4 c. melted butter</p>
<p>Spray a 9&#215;13 cake pan with non-stick spray. Mix the first 5 ingredients together in a large bowl, then spread in pan. Top with cornflake mixture. Bake at 350 degrees for 40 minutes.</p>
<p>Notes:<br />
- There is no need to thaw the hash browns as long as they are not frozen together in a clump.<br />
- The mixture can be prepared a day ahead of time and kept in the refrigerator until time to bake.<br />
- You can substitute another soup such as cream of mushroom or cream of chicken.<br />
- I didn&#8217;t forget to type in the salt. This tastes just fine without extra added salt. The soup and cheese add enough saltiness.</p>

1 can Cream of Chicken Soup<br />
1 lg. can Milnot<br />
1 can Cream of Mushroom Soup<br />
2/3 cup Milk<br />

1 Tbsp. Minced Onion<br />
1 lg. can Chow Mein Noodles</p>
<p>Tear or cut chicken into bite size pieces.  Mix soups, milnot, milk, onion and chicken together in pan, cook until creamy.</p>
<p>Add 2/3 can of chow mein noodles to soup mixture.  Pour into 13&#215;9 pan and cover with remaining noodles.  Bake at 350 degrees for 30 minutes, or until bubbly.</p>
